"I started as a dishwasher. I got tired
of washing dishes and I saw them
having a good time cooking and
thought, I want to do that. They got
trained me on sauté and I fell in love.
Same thing that I tell my kids – Don't
do it if you don't like it. It's a hard
job. A lot of hours. It's hard, it's hot,
you've got sweaty people yelling at
each other, arguing. If you don't want
to do it, don't do this for a job because
you're going to be miserable every day.
