We really learned about a lot of different aspects of cooking, pastry, food safety, how to host an event with linens, and preparation of appetizers to look great on the table. She had the best tomato sandwiches in the world. And the richest people in town knew it. It was like a hidden secret, that you'd include tomato sandwiches on a fancy party plate. She made tomato sandwiches high-brow. She would always cook at all of the most important people's functions, for hundreds of people. Her credo was that "service isn't being a servant." That one was big. You have to remember this was long back. She went to college, which was less common then for anyone, and for her, food service was a passion. She wanted us to know she chose it.
