AUBREY NEWBY: MISS FLETA'S PINEAPPLE SANDWICHES When I think of sandwiches, my mind floats to the little Baptist church where I grew up. Miss Fleta was a lady with perfect poise and manners, an independent woman not keen on the expected roles of women in those days. She was never much of a cook and never attempted to hide the fact; however, she had perfected the pineapple sandwich. I can still see those homecoming tables PHOTOS BY MIKE YOUNG on those hot summer days. There, mixed among the casseroles, bowls of fresh summer vegetables, chicken, and barbecue, would be these perfectly cut round pieces of bread slathered with mayonnaise and a round slice of pineapple. At Christmas gatherings, there might be a small maraschino cherry tucked inside. She expected to see one on your plate and for you to gush over how delicious they were! Oh, they were delicious, cut using the can of the pineapple so the circle perfectly matched the size of the pineapple ring inside. Everyone should have a Miss Fleta in their life. DEMARCUS BECKHAM: SALMON CAKE SANDWICHES Growing up, a Fried Salmon Cake Sandwich was a staple in my grandma's kitchen. Get yourself a couple cans of Double 'Q' Wild Caught Alaskan Pink Salmon, bread crumbs, and the Cajun seasoning, and you have a proper meal. Preparing the salmon sandwich, you can serve it on sourdough, brioche, or some simple Sunbeam white bread. But it is the sauce that W h a t 's y o u r c l a s s i c S o u t h e r n s a n d w i c h ?
