32 MACONMAGAZINE.COM Yellow Squash Casserole Ingredients: 10 lbs. fresh yellow squash 3/4 cup of unsalted butter 5 eggs 1-1/4 cups of panko 1/2 cups sugar 1-1/2 TBS salt 1/3 cup diced yellow onion 1/4 TBS black pepper 8 oz. sour cream 1/2-cup Romano cheeses Wash, cut and cook squash in water until soft. Be sure not to overcook. Drain well. (At least 15 minutes) Combine cooked squash with the rest of the ingredients and mix well. Bake at 325 until browned and bubbly. Pork Chop Marinade (For 10 lbs. of meat) Ingredients: 1 cup olive oil 4 cups red wine 1/8 cup lemon juice 1-1/4 wt. oz. fresh garlic (chopped) 1/2-cup capers (chopped) 1-1/2 wt. oz. yellow onion (chopped) 1/2-wt. oz. fresh basil (chopped fine) 3 wt. oz. kosher salt 1-1/2 wt. oz. black pepper Mix well and pour over meat.
