Sugar Cookies
Easy to make and great for
using cookie cutters.
3/4 cup shortening (or mix with
part butter or margarine)
1 cup sugar
2 eggs
½ teaspoon lemon flavoring or 1
teaspoon vanilla
2 ½ cups flour
1 teaspoon baking powder
1 teaspoon salt
Mix shortening, sugar, eggs
and flavoring thoroughly. Stir
together flour, baking powder
and salt in a separate bowl and
blend into shortening mixture.
Chill at least 1 hour.
Heat oven to 400 degrees. Roll
dough 1/8 inch thick on lightly
floured board. Cut with cookie
cutter. Place on ungreased
baking sheet. Bake 6 to 8
minutes or until cookies are a
delicate golden color. Makes
about 48 cookies.
Chocolate pinwheels
Make dough for Sugar Cookies.
Use vanilla for the flavoring.
Divide dough in half.
Blend 2 squares melted,
unsweetened chocolate (2
ounces) into one half of the
dough. Chill both halves.
Roll the vanilla dough into an
oblong, 12 x 9 inches. Roll out
the chocolate dough into the
same size. Lay on top of white.
Roll up tightly, jellyroll like,
beginning at wide side. Chill
again.
Heat oven to 400 degrees.
Cut 1/8 inch slices; place on
ungreased baking sheet. Bake
8 to 10 minutes. Makes 7 dozen
cookies.
