Pour the bacon fat into a safe dish and wipe the pan. Return 2 tablespoons of the fat to the pan and heat over low heat. Add 2 tablespoons of Balsamic or red wine vinegar, 3/4 teaspoon of salt, 1/2 teaspoon Dijon mustard and 1 teaspoon of honey and whisk until all elements are combined. Pour the dressing over the salad and toss to cover the salad elements in the dressing. Serve immediately.
